A New York City deli, line around the block and the unmistakable scent of pastrami sandwiches.
Inspired by such an experience, this rub brings deep aromatic flavours of dill seeds, coriander seeds, smoked paprika, garlic and onion, balanced with sea salt, cracked black pepper and a subtle hint of chilli. A savoury punch to steaks, roasts or grilled vegetables.
My favourite? Sprinkled on the most underrated cut - skirt steak, pan fried on maximum heat before resting and slicing thin.
For maximum flavour, rub on with a little oil and leave to marinate for 30 minutes before cooking.
